We don’t often return to the same restaurant twice, but we came back here 3 times during our 2 week stay in Canggu. One review described the cooking as “Columbian wizardy” and this guy ain’t lying. If you like food that feature playful use of flavors, textures, and interesting ingredients, this is the place. Standout dishes: 1. Jicama. This was magical and was our favorite. It was so good we ordered it twice. And we never repeat dishes. They’ve somehow transformed a radish?-like vegetable into something that taste so umami and almost meat-like. The toasty crunchy quinoa is genius and the subtle seaweed flavoring is bomb. 2. Woodfired potato bread. They have this with various dips. Bread itself is topped with some oil that makes it super tasty. 3. Tasmanian salmon ceviche. Loved how they balanced the acidity with the coconut milk. Crunchy element also paired nicely. 4. Wagyu picana. This was a anniversary special though so not sure if it’s usually available To be fair not all dishes were great though. We felt that these could be better - Hamachi ceviche. Too overwhelmingly acidic. Needed other dimensions of flavor - Lamb neck. Tender but flavor lacking something - Woodfired baby squid. Not bad but I was expecting more. Tasted mainly like just squid. Other notable mentions are the goat tart, red snapper ceviche, frozen banana Ambience is super nice as well. Service is cherry on top.
