I tried grilled salmon at this rejuvenated, elegantly decorated historical building in the Semarang's old city quarter. This dish that often time tastes boring (overpowering creamy butter sauce anyone?) was certainly a pleasant surprise. First, the dish was served at the right temperature. It is a testament how thorough the head chef did the QC before the dish arrived on the customer's table. Why was this important for me? Because I love salmon skin and it is pitiful if the skin were too hard or too soggy. Then as I enjoyed the salmon meat with the fresh veggies drenched in flavorful lemon garlic butter sauce the mashed potatoes hid the refreshing red sauce at the bottom which I guessed were some kind of reduced berry sauce. Whatever that hidden sauce might be, its acidity and sweetness went really well with other components on my plate. I can imagine the person who created this dish is playful but careful type of chef, who wants his/her customer not to just enjoy the food, but to experience a short adventure with their palates.
