I am here to try their JDW 2024 menu, La Terre, and will just focus solely on this menu only. Presentation is top knotch, resembling the earth - literally. The various hues of green is just so pleasing to the eyes. And it gets even more exciting when you cracked it opened. Different elements in yellow greeted you right after. Flavor-wise, from the combination of passionfruit mousse, mango coulis infused with lime leaf, and kaffir lime leaf streusel, I felt like being punched by acidity from the citrus and the passionfruit. The kind that will wake you up better than coffee. VERY SOUR. They caught me by surprise 😆 Apart from that, the mango offers a bold sweetness too. The matoa was sweet but like rambutan or longan kinda sweet (texture wise too). Overall I find it as such: tropical fruits with sweet and sour fighting for the central stage. I wasn’t sure the base is since there isn’t any description on that - it was a combination of salty, sweet and sour-ish. Texture wise, I personally find that the green earth crust was thick. The base, I had a difficult time trying to eat it the demure and mindful way - it was pretty hard to scoop. Though perhaps both needed to be that way for practical reason.
